The usual proportion of ingredients in ice cream: is 80 to 85 per cent, cream and milk products, 15 per cent sugar, one-half to four and one-half per cent flavouring, and three tenths of one per cent stabilizer.
The small amount of stabilizer is used in order to retain the smoothness of the ice cream by preventing the formation of coarse ice crystals. Pure food gelatin is usually used for this purpose.
In one-third of a litre of ice cream there are calcium, protein, and the ‘B’ vitamins as are in one-half cup of whole milk, and as much vitamin ‘A’ and calories as in one cup of milk.
